When Your Week Goes From 100 to -256 Day 59/365

My week was looking pretty good yesterday. I made a big dish of Chile Relleno Enchilada Casserole, headed out to my Civic League Social had a fairly easy stress free week. 

I should have known better. The universe likes to throw things at me. As I was walking in the door last night I got a text from my brother telling me that our grandfather had just died. 

Well I had to go home to pick stuff up but this was not the reason I wanted to be heading home. 

So now I am getting everything together for me being gone for 4 days. Rescheduling things, making sure the dogs are taken care of, and getting laundry and myself packed. 

So yes week just got a bit more stressful. 

However, I’m continuing to work on myself and prepare for the Fed & Fit Project which starts on Monday. 

Today’s motivation to prepare for the project:

Getting My Cooking Groove On 58/365

I’ve got some pretty yummy amaziness I have whipped up over the last week. And, of course I keep returning to my new favorite Cookbook Fed & Fit. I have 5 new cookbooks and yeah I just keep grabbing Fed & Fit. Seriously if you don’t have this book and your looking to change your eating habits, are all about clean/Paleo eating, or are just looking for some amazing recipes then grab this book. You can grab it right here, if you’d like. And, no I don’t get anything from you purchasing this book, I just love it that much. 

I made this awesome BBQ Chicken Potato Casserole the other day and well like everyone of the recipes from this book I have tons of leftovers that are now in my freezer waiting to me eat another day. 

So, I made this and the recipe calls for you to make mashed potatoes, however next time I think I’m going to make it with roasted potatoes instead of mashed. 

It looked pretty great when it came out of the oven. 

And it looked pretty tasty on my plate. Oh and guess what it tastes amazing. 

I love her recipes as they are clean healthy recipes, that are made with simple ingredients that you can find in any store, no need to search high and low for specialty ingredients, they are relatively quick to make, and also makes a ton. All of these things are reasons why I love this book. I love when things are easy to make, quick to make, because let’s face it we are all busy and spending hours to make a meal is just not doable, and having leftovers makes things great. Makes meal prep easy as it creates meals for several days or can easily be frozen to eat at a later time. 

I’ll be talking some more about Fed & Fit tomorrow and there Challenge which I am taking part in for the month of March. 

I’m currently making another recipe from her book Chile Relleno Enchilada Casserole I’m excited to try it out, I’ll let you know how it came out. I’m sure it will be phenomenal as every recipe has been. Haven’t made a recipe yet that I haven’t loved. 

And, as I’m getting ready for the Fed & Fit Project every day for the next week I will be getting emails from them to help get me ready for the program. Part of today’s email was this motivational quote and well it fits for where I currently am.

Belly Dancing 57/365

So before we even begin let me start by saying, I was not the one belly dancing. Although, I have done belly dancing classes, and I will say they are fun and oh my did my core burn afterwards. But, I also had my belly well covered there was no belly baring for me during belly dancing class. 

Anyway, moving on. My friend has a magazine he publishes about food in the area, and I’ve written some articles for him, I currently have one in the magazine that is hot off the presses. 

He does a big Release Party for the magazine every time and tonight was this issue’s Release Party night. He always has food demos, and talks , and some form of entertainment. Oh and they are held at some pretty amazing places. 

Tonight’s party was held at a pretty cool place that does farm to table food. So the menu is pretty limited which is hard when you can only eat certain things. Anyway, the food demos were pretty awesome again I couldn’t eat them but everyone who could loved them. Coffee rubbed smoked brisket sliders was one demo and the other bacon chocolate truffles. Yes, you heard right. 

The demos were followed up by the entertainment portion of the evening belly dancing. Well all I have to say is I’ve added a new goal to be as confident in my body as these ladies are. ​

Adding to my goals and making it happen.

Why Do You Hate Me & This Will Make You Laugh 56/365

There is nothing worse than enjoying a beautiful, sunny, 80 degree day in February with friends sitting out on the deck on the water of one of your favorite restaurants to have it all go downhill. 

As I mentioned the weather was amazing today. I blew off all of the stuff that needed to be done at home to enjoy the nice ocean breeze, sunshine, and spending some time with friends. We spent a couple hours eating and having some fun conversations. 

After we went our separate ways I headed home to do some of those chores I put off doing to enjoy the great day. Within 20 minutes of being home I got a horrible pain in my back, side, and it wrapped around to the front. Great!!! I knew exactly what this was. A kidney stone. Wonderful. Not at all what I want to be dealing with. I had one almost 6 months ago on the opposite side that landed me I the ER. As my husband is not home and I really didn’t want to be sitting in the ER, I’ve been dealing with it at home. Ughhhh I’m hoping it passes by tomorrow as I have several events tomorrow that I’m supposed to be taking part in. 

I’ll be calling my doctor to talk to him about what we can do to avoid these from occurring because they suck. And, really I don’t have time for this nonsense. 

However, I did see this and nearly peed my pants as I was laughing so hard. And, well laughter really is a great medicine. Holy Funniness seriously check it out you’ll be laughing quickly and if not I don’t know what to say.

Love This Meal 54/365

So, I have this go to Meal that I make a lot as it’s super easy to make, healthy, and tastes amazing. Oh and not to mention easy to change up just by the way you flavor the meet, eggplant, and tomatoes. 

Usually I make this with Italian Turkey Sausage and do a lot of Italian seasonings in the mixture. Today I used Flavor God’s Everything Seasoning. Oh wow it came out pretty amazing. 

So what do I call this concoction? I guess Eggplant Turkey Bake is the best thing to call it, however baking it isn’t really necessary, so maybe that’s not the best name for it. So, yeah I’m going to tell you how to make it and then you can help me come up with a name for it. 



  • Eggplant – I use a fairly large one
  • Onion – I use a medium one
  • 2lb Ground Turkey 
  • 2 14.5 oz cans Diced Tomatoes
  • Desired Seasonings
  • Mozzarella (optional)
  • Olive oil 2 tbsp


  • Dice onion
  • Chop eggplant into bite size pieces
  • Brown ground turkey add desired seasonings
  • Once meat is browned remove from heat and transfer to a bowl. 
  • In skillet heat olive oil add onion, cook until translucent, add eggplant allow eggplant to start to brown
  • Add diced tomatoes to skillet do not drain lower heat, cover, and allow to simmer until eggplant is softened. 
  • Now you can either add ground turkey to skillet, heat until desired temperature, and serve or 
  • Add ground turkey, stir to combine, and transfer to a 9×13 baking dish. 
  • Top with cheese if so desired
  • Place in 350 degree oven and bake until cheese is melted and golden brown if using, or until desired temperature if not using cheese. 

And, that’s it. So what should we call it?

Looks pretty good doesn’t it? I can tell you from experience it does!!!

Oh Wednesday Hump Day & National Margarita Day 53/365

Ahhhhh Wednesday you never cease to be a busy filled day. It’s the middle of the week we are all feeling the grind and realize we’ve made it to the half way point of the week. It’s all downhill from here to say. 

It’s almost like the universe knows it’s Wednesday AKA Hump Day. As the universe likes to throw lots of crap at me on Wednesdays. 

Started the day off with a work meeting and then catching up on stuff at the office as I haven’t been in the office in a month. It was good to get back in but man the stuff that’s gone on. Seriously, miss a day miss a lot apparently. 

On the drive home from the office I had to hit the brakes quick and my bag went flying off the seat and well my water bottle busted open getting my laptop, iPad, book, and notebook soaked. Great!!! Luckily the laptop and iPad were in cases so no damage was done to them. However, the same can’t be said for my book and notebook. Ughhhh!!!! 

The book I was able to peal the pages apart and finish reading, but I have to replace it as it’s destroyed. Thank you Amazon. My notebook was trash as well. I had to go through and transfer all of the notes to a new notebook. Luckily it was a new notebook and only had about 5 pages worth of info I needed to transfer. 

Yup, thanks universe because I didn’t have enough to do already. I got it done though and everything else that needed to be done today. 

Today is also National Margarita Day!!!! Whoooo!!!! And, also one of the last days a friend will be in town, oh and did I mention Restaurant Week here. So, what better thing to do then head out to a great new restaurant offering a great special for the week. 

$20 3 course meal with a drink. Uhmmmm yes please!!!

All I have to say is the portions were amazing and the company was awesome as always. I have some great friends and lots of laughs were had tonight. 

A margarita that was delicious, some guacamole, 3 tacos, and cinnamon ice cream. So good. It’s one of my favorite restaurants and when they run a special like that how can you not take advantage of it. 

Now it’s off to get some rest since tomorrow is shaping up to be a busy day too. And, I’m making one of my favorite dishes for an early dinner before heading off to my leadership class.

Improving In All Asects Of Life 52/365

Not only do I want to spend this year not only getting fitter and healthier I also want to grow in my professional career as well. 

Today, I got to do just that. I attended a Mastermind Summit where NY Times Best Selling Author Pat Hiban spoke. He’s the author of 6 Steps to 7 Figures. He talked about different ways for you to be the top dog so to speak. One of the things that I learned today I was actually already able to implement and plan to work on this skill and fine tune it. 

I can’t wait to get his book so that I can expand even more on the tips that were provided today and learn some new ones. 

I’m also in a Leadership program that is offered through the foundation I volunteer with and we are currently reading Rhinoceros Success. Are you a Rhino or a Cow?  I definitely want to be a Rhino. 

Can’t wait to dive further into this book and learn more about being a Rhino and implementing everything I learn in my personal and professional life.

Ulla: What Is That Day 51 out of this current 365 day cycle

So water. It’s important that we drink it, in fact we are supposed to drink half our body weight in water. Well holy moly that’s a lot of water for me as I’m not light little feather. 

Drinking water isn’t hard for me I in fact love water and drink it all of the time. My problem is I forget to drink. I get busy doing work and the like and then find myself getting a headache as I’m definitely dehydrated. 

One day I was scrolling through my Facebook newsfeed and there was one of those pesky adds that they now litter your newsfeed with, however this one caught my eye. Now, I’ve seen the smart water bottles that track your water intake, link to your fitness tracker, and sync with your phone. The only problem with these is I’m terrified of getting the bottle wet or dropping it as I’m not sure how the tech parts of the bottle will hold up to that. Plus it’s a bit pricey and my luck I’ll forget it somewhere, and if I don’t do that I’ll most definitely forget to charge it at some point. So, anyway the add I saw was not for a smart bottle but for this little device called Ulla. 

Ulla, doesn’t track your water intake it reminds you to drink continuously throughout the day. If you haven’t taken a drink in 30-40 minutes your Ulla will flash getting your attention reminding you to drink. The flashing definitely gets your attention. Once you take a drink it stops blinking and resets. I love this idea as I’m now drinking throughout the day as opposed to being like oh I’m thirsty and downing a big glass or bottle of water all at once. 

Today was the first day I’ve used my Ulla but I can tell you I’ve drank more today than I have in weeks and it’s because of the simple reminder I get. 

The Ulla doesn’t need to be charged as it uses a replaceable battery, is reasonably priced, and can be put on any bottle or cup or drinking vessel of your choice. Which is another perk to me over a smart bottle as I can use it with whatever I’m drinking out of I’m not limited to one specific bottle.

A Beautiful Day 50/365

It was another beautiful day here. 70’s with the sun shining. 

A group of my girlfriends and I decided to enjoy the day and head out to brunch. Unfortunately, a lot of other people had the same idea. Our original destination was crazy busy. I mean when they have a field as a parking lot and it’s packed that’s a sign. The next sign is when you ask how long the wait is and they tell you 2.5-3 hours. WHAT!!!! And, you look around at the 100+ people waiting for their tables you know the place is good. 

I’ve heard great things about this brunch spot and I’m guessing they are true. However, we were not waiting 3 hours for a table. We luckily had a backup plan. 

We ended up going to another great brunch spot and only waiting about 45 minutes. The food was excellent as always, but the real gem of the meal was the mimosa flights. I had some amazing mimosas with brunch this morning. 4 different mimosas to sample all for $10. Yeah, I think we will have to go back. 

No those are not all mine. But I can say that the 4 flavors I chose were amazing. 

  1. Forbidden fruit
  2. Mango
  3. Peach Pear Apricot
  4. Watermelon Limeaide

It was a tie between #3&#4 they were both amazing. And there were so many other flavors to choose from. 

My meal was a caprese omelette, tomato, basil, & mozzarella made with egg whites. It was delicious. And, enough to fill me up for the day. 

And, tomorrow starts clean eating and operation clean this disaster I call a house.

Yeah, It’s That Good 49/365

So when it’s February and it’s in the 70’s and you don’t get to enjoy the day as much as you’d like to due to work obligations and just plain catching up on life you still can eat ice cream. 

I love ice cream not going to lie. And, well yes I love to sit down with a pint of Ben and Jerrys and go to town. Unfortunately, that’s not really a great idea. I mean in the moment it’s great but later the guilt will set it. 

However, I’ve found my new guilt-free well nearly guilt-free ice cream. Halo Top. OMG!!! So good. 

You can eat the entire pint and still be under 400 calories and as for fat there isn’t a ton of that either. 

I’m super excited that in the last couple of months they have released new flavors and I’m currently trying the Peanut Butter Cup. It’s pretty tasty. 

I won’t lie I ate half the pint. And since tomorrow is looking to be another beautiful day I’ll eat the other half tomorrow. 

There is another brand called Artic Zero which is along the same lines however, I find to like Halo Top better. 

Ahhhh ice cream. I actually plan on purée some fruit and put them in ice pop molds because well hey that’s way better for you then even Halo Top.

Comfort 48/365

Today the munchkin and I went and played at the indoor playground. We were there for 3 hours. 

3 hours of running, climbing, sliding, and chasing. He had a ton of fun and made some new friends while there. We also got to do some painting while there. I will tell you this he was very intense and completely into the painting. He did not want to stop until every last drop of paint was used. 

After the paint was all used up it was back to running, climbing, and playing. 

We followed up our playtime with lunch at Chick-Fil-A which of course resulted in playing in the play area there as well. 

All of this playing of course meant I had an exhausted 2 year old who passed out in the 7 minute car ride home. 

A 3 hour nap later and we were right back at being a wild man. Of course this time it involved chasing the dogs and the dogs chasing him. He’ll be ready for bed tonight. 

Seriously, how does something so small have so much energy. Can I get a tenth of it please. 

Here’s to the weekend and a beautiful one at that.
