Getting My Cooking Groove On 58/365

I’ve got some pretty yummy amaziness I have whipped up over the last week. And, of course I keep returning to my new favorite Cookbook Fed & Fit. I have 5 new cookbooks and yeah I just keep grabbing Fed & Fit. Seriously if you don’t have this book and your looking to change your eating habits, are all about clean/Paleo eating, or are just looking for some amazing recipes then grab this book. You can grab it right here, if you’d like. And, no I don’t get anything from you purchasing this book, I just love it that much. 

I made this awesome BBQ Chicken Potato Casserole the other day and well like everyone of the recipes from this book I have tons of leftovers that are now in my freezer waiting to me eat another day. 

So, I made this and the recipe calls for you to make mashed potatoes, however next time I think I’m going to make it with roasted potatoes instead of mashed. 

It looked pretty great when it came out of the oven. 

And it looked pretty tasty on my plate. Oh and guess what it tastes amazing. 

I love her recipes as they are clean healthy recipes, that are made with simple ingredients that you can find in any store, no need to search high and low for specialty ingredients, they are relatively quick to make, and also makes a ton. All of these things are reasons why I love this book. I love when things are easy to make, quick to make, because let’s face it we are all busy and spending hours to make a meal is just not doable, and having leftovers makes things great. Makes meal prep easy as it creates meals for several days or can easily be frozen to eat at a later time. 

I’ll be talking some more about Fed & Fit tomorrow and there Challenge which I am taking part in for the month of March. 

I’m currently making another recipe from her book Chile Relleno Enchilada Casserole I’m excited to try it out, I’ll let you know how it came out. I’m sure it will be phenomenal as every recipe has been. Haven’t made a recipe yet that I haven’t loved. 

And, as I’m getting ready for the Fed & Fit Project every day for the next week I will be getting emails from them to help get me ready for the program. Part of today’s email was this motivational quote and well it fits for where I currently am.
