When It Rains… 239/365

It’s rainy and windy here today. Of course it is nothing compared to what the people of Texas are dealing with, but it’s nasty outside which means it’s not grilling weather.

It was more of a comfort, warm me up, kind of night. I went to the handy dandy freezer and pulled out some soups that I had made and defrosted them. Mexican Chicken Soup for my husband and Cauliflower Soup for me, made with a purple cauliflower 😲. Paired the soups with some grilled cheese sandwiches and dinner was served.

I can’t tell you how much I love having meals in the freezer ready to go. I was taking inventory today and was like uh-oh I’m going to have to start making some more big batches of food to replenish the stock in the freezer. I still have a few meals on hand but now that fall is approaching I’ll be cooking more meals instead of grilling everything and I’ll be adding to the freezer once again.

Of course with this means I’m pouring through my cookbooks again and of course looking for new cookbooks to try. I’m all about experimenting in the kitchen and with fun meals. I’ve also been drooling over an InstaPot I think the purchase is going to be made soon. It’s just a matter of which one I want.

Today I also checked out the new Aldi’s that just opened last week down the street. I love Aldi’s and I fell even more in love today when I saw that they had an entire gluten free section with some great products I’m excited to try. But, the big love was when I found LaCroix in 15 Can boxes for $3.99 in 2 of my favorite flavors. I only bought one box of each but I could of easily filled an entire cart with this find
