Whoooo this week it’s actually feeling like fall all of a sudden. Today was complete with rain and a chilly rain at that.
Which I was a okay with as I had pulled out French Onion Soup from the freezer and it was what I’d planned on for dinner tonight. I’m glad I had planned on this for dinner as it required very little work on my part. Heat up the soup, toast the crouton and then throw some cheese on top and place under the broiler. This was perfect as I got home from the office way later than normal. As in 2+ hours later than usual. I’m usually home from the office by 4 at the absolute latest but usually I’m home by 3-3:30. Tonight it was quarter to 6 when I walked in the door. But, I’m not going to complain about it since it was because I was setting up appointments and doing some research.
Dinner looks pretty good doesn’t it. Guess what it is. I have made this recipe many times. It’s my favorite recipe for French Onion Soup. I found it on Pinterest years ago, and I can’t even tell you how many times it’s been made since. I will tell you it is a bit time consuming but so worth it and one pot of this makes plenty and I always have some for the freezer to pull out for those unexpected days when it’s cold and wet or you just need something to heat up and eat because well life happened. This morning I hit up OTF for a session. It was a good one. It was esp day or a little bit of everything is what I like to call it endurance, power, and strength. Oh and it was a run/row day and also a switch day. I’m not crazy about run/rows because well I hate rowing but they weren’t too awful. They were short distances and the distances on the treads weren’t long either they were at all out paces. As for the switch I love it because there is no getting bored you’re constantly changing what you’re doing. And, well add in the run/row and there was plenty going on and no long block of doing something.
I spent the day at the office doing work and got some pointers on things I could do to make sure I’m up to date on things.
While I was there the owner of the company pulled out her new diffuser. I fell in love with it and asked where she got it as I wanted one. She had bought two and promptly gave it to me. I was floored. I told her no but she wouldn’t take no for an answer. I nearly cried. I came home and set it up and am now enjoying it along with my salt lamp and just trying to relax, unwind, and not let the stress and anxiety that I’ve been dealing with overwhelm me.
I have a feeling this will be added to my nightly routine along with some meditation time. I need to just keep reminding myself to keep breathing and relax it will all work out in the end.
